
So, for the last 3 weeks, I am trying to renovate the smallest room in my apartment. Aside from the smell of all kinds of wall-correcting materials that I seem to feel even outside of my home, preparing for Shabbat is a challenge. My kitchen goes right into that little room, which is exactly why I have such a small kitchen – the room was carved out of it.
Thankfully, we are fine with salads that I make from, practically, anything that I find in the house.
So, here it is – my Broccoli Salad. Feel free to improvise – I always do:
1 bunch of fresh broccoli
A few grape tomatoes – different colors look great
Lots of garlic, if you are into it like we are
Scallions, green olives, salt, pepper to taste
Cook broccoli in salted boiling water for no more than 3 minutes. Cool.
Add cooled broccoli to grape tomatoes, scallions, sliced olives and very thinly sliced garlic.
Add a tiny bit of mayonnaise, less than a teaspoonful, olive oil and spices.
This time I used grapefruit pieces (sans membranes please) as I didn’t have a fresh lemon.
I also add my “secret” ingredient almost everywhere – turmeric – Love it, love it, love it!
If you want, add a few dried cranberries and some sliced almonds – I did.
